Why is gourmet hot sauce so popular today?

It’s no secret, Americans have a love affair with spicy foods. Did you know there are foods so spicy they might literally kill you? Those are the ones you should avoid at all costs. The reason people love spice is based on science, not genetics. It turns out that there is no such thing as a spice-loving gene. No one is born loving hot sauce.
When you eat foods with capsaicin, like chili peppers or jalapenos, certain receptors in your mouth pop off, and that tricks your brain and get the feeling your mouth is on fire. Some folks even theorize that those who were exposed to spicy foods in their childhood are more likely to like it.
